Preparation

Place the chopped peaches, basil leaves, lemon juice and honey or agave syrup in a blender.

Blend everything on a high speed until the mixture is smooth and homogeneous.

If desired, you can pass the mixture through a fine sieve to remove the solids and obtain a silkier drink.

Pour the mixture into glasses over ice cubes until about half full.

Now add the rum or gin to the alcoholic version.

Fill the glasses with sparkling water and stir gently.

Garnish with a basil leaf and perhaps a thin slice of peach.
