Preparation

Cook the pasta according to the packet instructions until al dente, drain the cooking water and leave the pasta to cool.

Sauté the carrots in butter, deglaze with stock, cook until crisp. Add the mushrooms in the last 3 minutes of cooking time.

Salad dressing: Mix all the ingredients together, add the pasta, carrot and mushroom mixture and cucumber, mix.

Garnish with tomatoes before serving.
