Preparation
- Cook the pasta according to the packet instructions until al dente, drain the cooking water and leave the pasta to cool.
- Sauté the carrots in butter, deglaze with stock, cook until crisp. Add the mushrooms in the last 3 minutes of cooking time.
- Salad dressing: Mix all the ingredients together, add the pasta, carrot and mushroom mixture and cucumber, mix.
- Garnish with tomatoes before serving.
